  • For 6 persons :
  • 300 g half-cooked foie gras
  • 100 g of hazelnuts
  • 20 cl of balsamic vinegar
  • 50 g brown sugar
  • skewers


Boil 20 cl of balsamic vinegar with 2 tbsp. water and 50 g brown sugar, then simmer until the mixture has reduced by half. Cut the foie gras into cubes of about 2 x 2 cm with a smooth knife that you soak in hot water at each cut. Crush the hazelnuts in the blender. Pour them in a pan and brown them for a few minutes. Stitch a cube of foie gras on a skewer, dip it in the vinegar syrup, then roll it in the crushed hazelnuts. Arrange on a plate and serve.
